Head Country BBQ Meatloaf - Simple and Extremely Tasty 2 lb Ground Beef ½ med Onion, finely diced 1 c Head Country BBQ Sauce + More 2 eggs ½ T Salt ½ t Pepper 1 t Garlic Powder ¼ t Cayenne Panko Bread Crumbs Preheat the oven to 350* and spray a small “loaf” baking dish with nonstick spray. Dice up the onion and add to a large bowl. Add the BBQ sauce, eggs, and seasonings and mix well. Add the ground beef and use your hands to combine the ingredients really well. Add about ½ c of panko to the meatloaf mixture and mix well. If necessary, add more panko and mix together. Add enough panko so the mixture forms into a ball. Add to the prepared baking dish and cook for 45 minutes. Remove from the oven and drain the grease from the meatloaf, if using a high fat ground beef it could be a lot. Once as much of the grease is drained, pour more of the BBQ sauce on top of the meatloaf until the top is completely covered and some of it is going down the sides. Cook for another 15 minutes, then turn the broiler on for 2-3 minutes to caramelize the BBQ glaze. Let sit for 5 minutes and serve.

I LOVE Head Country BBQ Sauce!! If you don’t have it locally you can look it up and order it online. To be honest… any other BBQ Sauce will make this recipe less than. When I eat this I sprinkle some cheddar cheese on top and then top it off with more BBQ Sauce.
